This is one of our favorite accompaniments with one of our favorite cheeses made by one of our favorite cheese makers. Both the Bloomsdale and the rhubarb are bright, acidic, and tangy, a great way to wake up your palate at the beginning of a platter. As much as we love Bloomsdale, it’s not available everywhere. You can pair this rosé rhubarb with just about any chèvre, but look for Valençay, the ash-covered French pyramid Bloomsdale is based on.
